Diwali takes me to a walk down the cherishable memory lane. I remember this is the one such festival packed with so much excitement for the D day, where we can fire the crackers all night long, relish delicious food, take part in the lakshmi pooja and never forget new clothes and jewelery. I would do anything for those days. I was always a silent spectator when it comes to fireworks (bombs) like lakshmi tapas, vankaya bambulu, rockets, parachutes etc, I would be on the safer side with kakarathulu, chichu buddulu, venna muddalu, nela tapakayalu, paamu billalu, Bhu chakram,Vishnu chakram and my most favorite Aggipettalu. I remember my grandma asking us to lit the diya( lamp) outside the house during the whole month of diwali and recite this sloka for the sandhya deepam( evening lamp).

Coming to the special dish on this diwali, i made my husbands favorite " Pineapple Dessert". I got this recipe from my sister( who is a great cook ) and this has won the hearts of many of our friends and relatives. This has been an indispensable dessert for Diwali of our close relatives living in the US for years! This will be entry for Monthly Mingle hosted By Meeta
Usually this would come first in my list when we expect someone for lunch/dinner. Almost everyone who tasted this asked for the recipe and were really surprised to know how easy, delicious and light this was.
You need:
1 - 8oz cool whip or home made whipped cream
1 - 20 0z crushed pineapple can in its own juice
1 - 14 oz sweetened condensed milk or milkmaid
A big fistful of almonds( badam )
A big fistful of cashewnuts( kaju )
25 pistachios( pista )
Preparation:
Keep the cool whip whipped cream outside for 20 min until it becomes spreadable. For fresh cream you can avoid this step
In a blender or chopper chop the nuts coarsely and keep aside
Drain the crushed pineapple and keep it aside
In a big bowl mix in whipped cream, condensed milk, pineapple and chopped nuts
Freeze it for 6-8 hours or overnight
Tada! pineapple dessert is ready to serve!!
This pineapple dessert is neither too sweet nor too sour, Its just right.Be generous and Never forget the nuts which add crunch and so much flavor to the dessert. I am gonna make this again for the Diwali potluck this weekend. Hope the magic works again!!

Actually, I have used the cool whip in another dessert that called for mixing it with mixed fruits. When I did that, it was like as thought the fruits were folded in the cream mixture. Also, when I kept it out for my friends it became runny in 15 to 20 mins. I donno what went wrong.
Can you tell me how you kept your dessert to hold it's shape? Sorry to bother you.

ReplyDelete. As soon as i got the coolwhip if you are not using rightaway store in the freezer and when its time to use it, i would usually put it outside for say 15- 20 min, until it becomes spreadable
. When adding fruits in this case i drained all the juice, otherwise it becomes runny as you said( as far as i know when you add any mositure like water juice it becomes runny later or forms crystals when freezed
. Once you mix everything you should let it rest in freezer overnight. And you should leave it outside for 5-10 min before servine, coolwhip when left at rroom temperature for longer becomes watery, so serve it after 5 -10 min or put it back in the freezer if you want to save it for later use. Hope this helps.
Thankyou so much for the tips. I wanted to make this for a dinner at my friends place. Unfortunately, my son was sick yesterday night and we had to spend the whole night at ER. ReplyDeleteYes you should let it stand at room temperature for 15-20 min before having it, so that it would be easier to cut. To make sure the dessert is not crystalized, you should really squeeze all the juice from the pineapple before mixing in.

ReplyDeleteI have tried this dessert sometime back and it turned out fantastic....Our freinds too liked it....Today i made it for my friend as well..., But i have made few modifications to the recipe....I added 1 orange's rind to the dessert which added a fantastic orangey boost, plus i added 1/2 tbs gelatine melted in some juice and also served with caramelized nuts.....Was Superb! Thanks for sharing such a wonderful and easy dessert....This is going to be on the regular dessert list:)
